Cheesy Baked Salmon from Chile

Ingredients

1kg Salmon
200g Mild Melty Cheese, sliced thinly
100g Longaniza/Chorizo, sliced thinly
1 Tomato, sliced into thin rounds
1 Onion, sliced thinly
3 Cloves Garlic, sliced
Juice of 1 Lemon
2 Sprigs Fresh Oregano
60ml Dry White Wine

Directions

In a bowl, toss the salmon filets with the juice of 1 lemon, 3 cloves of thinly sliced garlic, some salt and pepper.
Cover with plastic wrap and marinate in the fridge for 1 hour.
Preheat the oven to 180°C/360°F.
Thinly slice an onion and layer it on the bottom of a baking dish.
Place the marinated salmon filets on top.
Layer thin slices of mild cheese like gruyere or queso de fundo on top of the fish, followed by thinly sliced tomato, chorizo or longaniza, and a couple sprigs of fresh oregano.
Bake in the oven for 25min.
Remove and add 60ml of dry white wine.
Place back in the oven under the broiler for 5 minutes or until the sausage crisps up.
