Comoran Tropical Fish Stew

Ingredients

500g Fish, cut into manageable pieces
1 Onion, roughly chopped
4 Tomatoes, cubed
3 Plantains, roughly chopped
1 Cassava, cubed
Chillies, to taste, finely chopped
1/2tsp Coriander
1/2tsp Cumin
1/2tsp Turmeric
400ml Coconut milk
400ml Water
Juice of 1/2 a Lemon

Directions

Peel and chop plantains and cassava.
Add to a pot, cover with water, and bring to a boil.
Cook for 15min until half-cooked.

In some coconut or vegetable oil, fry 500g of fish until crisp on all sides.
Remove to a paper towel to drain.

Drain the plantains and cassava.
To the same pot, add the fried fish as well as a roughly chopped onion, four cubed tomatoes, finely minced chillies, and 1/2tsp each of coriander, cumin, and turmeric.
Season with salt & pepper, then cover with one 400ml can of coconut milk, and 400ml of water.

Bring to a boil, then simmer, covered, for 15-20min, until the fish is cooked through.
Sprinkle with lemon juice before serving.
